I found an extraordinary recipe the other day, and I want to share it with you! It's for Hot German Potato Salad. My family and I lived in Germany for a total of 10 years; 4 years right after my husband and I were married, and then 6 years later on when our kids were young. We love, love, love Germany and German food! I hope you like this recipe as much as we do.
Hot German Potato Salad
(from recipezaar.com)
10 slices bacon, diced
1 cup sugar (or less. I used 1/2 cup.)
1 cup distilled white vinegar
2 eggs
1 teaspoon salt
1 teaspoon prepared mustard
1 dash cayenne pepper
10 large potatoes, boiled
1 medium onion, sliced (optional)
1. Dice and fry bacon.
2. In a small bowl, combine eggs, salt, mustard, sugar, vinegar, and cayenne pepper.
3. Beat egg mixture well and pour into hot pan with bacon and bacon grease, stirring till thickened.
4. Add diced cooked potatoes and sliced onion (or onion powder).
5. Serve hot.
So that's the official recipe. I tweaked it just a bit, and here's what I did. I cooked the onions with the bacon before adding the egg mixture. In case you are confused about the eggs--like I was at first--these are RAW eggs you'll be pouring in the bacon grease. Don't worry about it! It works! I used about 2 pounds (1 kilo) of new potatoes. I boiled them whole and then sliced them just before adding the sauce to them. Because I used fewer potatoes than the recipe actually calls for, I had some extra sauce. I liked it that way. The salad was perfect!
This can be served hot or cold. We tried it both ways. I think I liked it better hot, but it was still very good cold.
Guten appetit! Post a comment if you try this recipe, and let me know how you like it.
